Curry That Will Cure You - Green Curry

Just a quick one tonight, the flu is going around again and after seeing my sister/niece this weekend who are both radiating sick stuff, I am starting to feel that oh so familiar scratchiness in the back of my throat :(.
As you all know I like to combat the flu head on with as much heat as possible, and as I had 2 games of netball tonight, I tackled 101 Cookbooks' In A Hurry Green Curry.
Recipe & pic literally copy and pasted from their blog below (and converted to metric!);


2 teaspoons green curry paste* (Note, I used premade, store bought Thai Green Curry Paste from Trans - once of the best/biggest Asian food specialists in Perth)
scant 1/2 teaspoon salt
400g coconut milk
1 large onion, sliced
400 ml water or light vegetable broth (I used Massels Chicken Stock)
170 g of firm tofu cut into 1/2 inch cubes
1 cup peas, fresh or frozen
2 cups asparagus, cut into 1/2-inch segments
squeeze of fresh lime juice
1/4 cup small basil leaves
In a large thick bottom pot over medium heat whisk the curry paste with the salt and a small splash of the coconut milk. Simmer for just a minute. Add the onion and saute until it softens up, just a minute or so. Add the rest of the coconut milk and broth and simmer for another five minutes. Taste and adjust for flavor - this would be the time to add more curry paste if needed.
Stir in the tofu and (JUST BEFORE SERVING) the peas and asparagus, simmer for just a minute or two, just long enough for the vegetables to cook a bit. Finish the pot with a squeeze of lime and basil leaves. Taste, and adjust seasoning again if needed.

101 Cookbooks can do no wrong, this was delicious and had me questioning when the last time I had green curry was?? And why I don't have it more! So good, and the perfect thing for my sore throat!
Sorry for the lazy post tonight fellas', worry not, I just bought a bulk load of Vegg to experiment with, and look forward to sharing the crazy cool results with you soon! I also just made a little somethin', somethin' I may share depending on just how tasty it is :)
