<span style="font-family: Arial, Helvetica, sans-serif;">In a cup add nuttelex to milk and water, and nuke in the microwave for 30 seconds, and stir to melt butter completely into milk. Pour this into the mixing bowl, along with the vegg, and stir until it comes together into a dough: it should be firm, but soft.</span></div>

Lightly grease a bowl and add dough, cover with a damp tea towel, and leave in a warm place (I put it outside in the sun) for about an hour.</span></span></div>

<span style="font-family: Arial, Helvetica, sans-serif;">Shape into 4, folding each side tightly into the centre in turn, turning as you go, then turn the ball over and put it on a lightly floured baking tray or board, spacing them well apart. Cover and leave to rise again for 45 minutes.</span></div>

Cook the doughnuts for about 3 minutes on each side, until golden, flip in a bowl of sugar, and allow them to cool slightly. Using a skewer to make a hole that goes from one side of the donut to the other (without piercing the other side). Use a piping bag or in my case a giant syringe to inject a vein of jam. Eat while warm. BOOYA.</span></span></div>

<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">Bring coconut cream to the boil.Add vinegar, agar and salt. Whisk the lumps out and turn heat down to medium. Add the remaining ingredients, constantly whisking to avoid lumps.</span><br />
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">In a plastic container line the bottom with baking paper. Pour the cheese mixture into the mould and cool for a few hours. The cheese will solidify the further it cools down. You can slice it like cheese, it melts, but doesn't get 'gooey', you cant win them all huh?</span><br />

<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">Things I would do different?</span><br />
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">Nooch instead of Vegg, it just gives it that Vegg aroma that I cant handle - and I would double the amount. Also I would try adding some Braggs for a little umami? Maybe black pepper?</span><br />
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">Now I have this basic recipe I am really excited to shake things up, once I have perfected the flavour it could be ok to be served with crackers? I coat the outside with parsley and crushed nuts, so many ideas, so little time!!!</span><br />

Put in the oven and cook until light brown. It may puff up - don't worry about that :)</span></span><br />
<span style="background-color: white; font-size: 14px;"><span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">In a saucepan heat some oil.</span></span><br />
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"><span style="background-color: white; font-size: 14px;">Add garlic and leek, cook until soft and translucent. </span><span style="background-color: white; font-size: 14px;">Add mushroom and cook until it releases it juices. </span></span><br />
<span style="background-color: white; font-size: 14px;"><span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">In a separate fry pan toss in the chicken and fry until crispy.</span></span><br />
<span style="background-color: white; font-size: 14px;"><span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">In another pot melt the nuttelex, whisk in the flour, tapioca, chicken stock and soy milk.</span></span><br />
<span style="background-color: white; font-size: 14px;"><span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">Add the creamy mixture to the mushroom and leek, stir in the chicken, spinach, thyme (MUST rub between fingers first!), nutmeg, and season with salt and pepper to taste,</span></span><br />
<span style="background-color: white; font-size: 14px;"><span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">Tweak herbs & spices until just right. Pile the mix into prepared pie crust and smooth down. </span></span><br />
<span style="background-color: white; font-size: 14px;"><span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">Top the filling with pastry lid and trim edges. </span></span><br />
<span style="background-color: white; font-size: 14px;"><span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">In a small bowl combine soy milk and oil, and brush over lid with pastry brush. Prick holes in lid, pop in the oven and bake until golden brown.</span></span><br />

I whisked together a tablespoon of salt, teaspoon of chicken stock powder and a teaspoon of cayenne chilli powder together, and coated the frozen chips. Once cooked I sprinkled some more on top and tossed through. Deeeeelish!</span></span><br />

I haven't really been sure how to put into words my argument because I think its best talked about in conversation.</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">My partner Morgan and I have challenged ourselves to be more socially responsible with where we shop.</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">Basically there is a dangerous duopoly in Australia's marketplace. The two companies concerned are Woolworths and Wesfarmers. These companies boast some pretty impressive stats. Woolworths is the largest retail company in Australia and New Zealand, it is the largest food retailer, largest takeaway liquor retailer and largest hotel and poker machine operator in Australia. Guess who is coming second?</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;"><br /></span>
<span style="font-family: Arial, Helvetica, sans-serif;">I don't know about you but I don't feel entirely comfortable about funnelling all of my money into the two largest companies in Australia, it just doesn't sit right, and you don't need to have a degree in economics to know it aint right.</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">Isn't it eery going into a small town (i could stop there) and noticing that there are no independent businesses anymore? The old bakery, butchers and grocery store have now been replaced with a coles express, the old bottle shop is now a BWS. The old fuel station is now a caltex. They are all uniform, no different to the Coles, BWS and Caltex in the next town over. They stock sub-par vegetables and mainstream alco-pops, but nobody cares because THEY ARE SO CHEAP! How are they so cheap? Because they have the market by its balls. They muscled out the competition and are now around every corner.</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">It's sad.</span><br />

<span style="font-family: Arial, Helvetica, sans-serif;">So, we have put a self imposed ban on all establishments owned by either of these companies, and I encourage you to do the same. Don't go to Woolies for your weekly grocery run, go to the Sunday markets, fresh, organic, cheap, Australian made and grown, and this is peoples lively-hood!</span><br />

There is a great little bottle shop around the corner with loads of imported alcohol which has a better range and is cheaper than most places. We are spending less money buying bulk from Kakulas Brothers. We are eating better quality veg shopping at our local European grocers, when we ran out of a particularly hard to find light bulb we ended up finding an adorable family owned hardware store where the sales clerk was more than happy to assist us.</span><br />

<span style="font-family: Arial, Helvetica, sans-serif;">I think this is worth your consideration. Not only are you finding little gems that make your life easier, you are helping local independent business owners that need our patronage far more than these big companies do. When I explained what we were doing to a friend she said to me 'No offence Kelly, but you are just 2 people, what difference can you make?'. Every cent not spent at one of these 'fine establishments' makes a difference. And by spreading the word you can also make a difference. </span><br />

Our go-to for comfort food is always something that includes lots of potato, greens, gravy and something kick ass to tie it all together. Crumbed chicken breast would do quite nicely!</span><br />

<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">In a large bowl mix gluten flour, chicken stock powder, garlic powder, chilli flakes, paprika and a healthy grind of salt and pepper. Pour in oil and water and mix until thoroughly combined. Set aside.</span></div>

<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">In a separate smaller bowl whisk together soy milk, oil, flax seed and the juice of half a lemon. </span></div>

<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">Pull 'chicken meat' out of the bowl and on a chopping board form several small patties, and flatten them out with your hands. Dip into the milk mix, and then thoroughly cover in bread crumb mix, patting the bread crumbs into the meat to stick.</span></div>

<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">Placed on a lined baking tray and cook for 20 mins until chicken is a light golden brown.</span></div>

<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">Toss through so oil is coating vegetables, and stir through herbs. Cook through for 5 mins until vegies are tender. Add in stock and kale, and stir through. Taste soup and season with salt and pepper as needed, add extra stock powder and water to taste.</span><br />
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">Add rinsed beans, bring to the boil and turn down to simmer.</span><br />
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">Whilst soup is simmering in a separate fry pan heat some oil. Add faux chicken chunks, cook until soft, smother in sriracha and fry up until crispy.</span><br />

<span style="font-family: Arial, Helvetica, sans-serif;">Add peppers and continue cooking until soft, add the chicken stock, canned tomatoes, kidney beans, bring to a boil, reduce and simmer for 15-20mins. Taste and season as necessary.</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">In a separate bowl, whisk together spices.</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">To plate up, spoon soup into bowls, top with a handful of corn, coriander, sliced avocado, and a squeeze of lime. Serve with tortillas (fresh or grilled for a few mins until crunchy) for dipping.</span><br />

<li style="margin: 0px; padding: 0px 0px 5px;">In a saucepan, bring the stock and water to the boil. Turn down to a simmer.</li>
<li style="margin: 0px; padding: 0px 0px 5px;">In a large frypan, sauté the onion, garlic and parsley for a few minutes before adding the rice.</li>
<li style="margin: 0px; padding: 0px 0px 5px;">Add the rice and stir so that it is completed coated in the onion mixture.</li>
<li style="margin: 0px; padding: 0px 0px 5px;">Gradually ladle in the stock, one ladleful at a time. Stirring through and allowing the rice to absorb the liquid before adding the next batch. Once the rice is cooked through and creamy, stop adding the stock mixture.</li>
<li style="margin: 0px; padding: 0px 0px 5px;">Stir through the nutritional yeast, salt and pepper before allowing to chill completely.</li>
<li style="margin: 0px; padding: 0px 0px 5px;">Once chilled, remove the mixture from the fridge. Heap tablespoons of mixture and push a piece of Cheezly into the middle before forming into a neat ball.</li>
<li style="margin: 0px; padding: 0px 0px 5px;">In one shallow bowl, whisk together the soy milk and apple cider vinegar. In another shallow bowl, add the breadcrumbs.</li>
<li style="margin: 0px; padding: 0px 0px 5px;">One ball at a time, dip into the soy milk mixture and then into the crumbs.</li>
<li style="margin: 0px; padding: 0px 0px 5px;">Fill a pan or deep-fryer with oil and heat.</li>
<li style="margin: 0px; padding: 0px 0px 5px;">Add the arancini balls to the hot oil and cook for a couple of minutes until they are golden brown. Remove and drain on paper towel. Serve warm.</li>

You can easily switch up the flavor with your favorite risotto recipes too. I'm thinking next time I will try leek instead of onion, and a shiitake broth instead of chicken stock. Ooh and maybe a squirt of sriracha in the center!</span></div>

I ALSO love peanut butter and chocolate together! And Ok, confession time. I am a banana hoarder. I clean out the freezer every so often and find like 5 bananas that I am always 'going to' make banana bread with. Pro-tip, before you do hoard your bananas, peel and chop into smaller blender sized bits and freeze in a container.</span><br />

<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">Heat a frying pan with a little oil. Once hot add the slices of eggplant and fry as you would bacon, charring slightly on both sides for the smoky bacon taste until crisp. Dice and serve.</span></div>

It was a co-workers last day on Friday so I figured I had a moral obligation to contribute to the occasion. I was looking for something easy, tasty, and cute, and stumbled across a pic a while ago of some very cute tea bag biscuits, so I thought I would give it a go! What follows is the simplest shortbread recipe ever.</span></div>

<span style="font-family: Arial, Helvetica, sans-serif;">150g Vegan Chocolate (as mentioned previously, I use Sweet Williams Choc Chips)</span></div>

<span style="font-family: Arial, Helvetica, sans-serif;">Method;</span></div>
<div>
<span style="font-family: Arial, Helvetica, sans-serif;">Preheat oven to 180deg.</span></div>
<div>
<span style="font-family: Arial, Helvetica, sans-serif;">Line baking trays with baking paper (I used 3).</span></div>
<div>
<span style="font-family: Arial, Helvetica, sans-serif;">In a mixing bowl combine nuttelex, vanilla essence, icing sugar and 1 cup of flour. Mix until barely combined, then add the rest of the flour. I have a <a href="http://www.breville.com.au/food-preparation/mixers/bem410-colours.html">Breville 'Scraper Mixer</a>' (in red 'cause it goes faster), and used it with a dough hook attachment, and it did all the hard work for me. Lightly dust a sheet of baking paper (to work on) and roll out the dough with a lightly floured rolling pin. You can do it in 2 batches to make it a little easier to handle. </span></div>

<span style="font-family: Arial, Helvetica, sans-serif;">Next cut them into the shape you want, these don't spread or rise. To shape my tea bags I used a butchers knife (ironic I know) to trim the dough into a square, I cut the dough into strips the same width of a tea bag (roughly 4cm?), cut them to length, and trimmed off the corners for the top of the bag, Use a chop stick/tooth pick to poke a hole into the top centre to tie the string. Using a metal spatula I slid the biscuits onto baking trays, and baked for approximately 10 mins each. I did some for longer than others with mixed reviews, some liked them just done - melt in your mouth, others liked them crunchier. </span></div>

<span style="font-family: Arial, Helvetica, sans-serif;">Pull the biscuits out to cool and finish off remaining batches.</span></div>

<span style="font-family: Arial, Helvetica, sans-serif;">Once the biscuits have cooled, melt chocolate (I do it on the stove top) and dip each biscuit into the chocolate, ensuring the bottom half is completely covered. Shake off as much excess chocolate as possible, and then pop back onto the baking paper so the chocolate can set. </span></div>

<span style="font-family: Arial, Helvetica, sans-serif;">Whilst the chocolate is setting, prepare the string & tags for the tea bags. Cut cardboard into small squares and decorate. Cut the string to size, staple or tape it to the tag, and poke through the holes of the biscuits.</span></div>

Once boiling, lower heat to simmer and cook for about 15 minutes, or until potatoes are tender.</strong></div>

It’s important to do this while everything is still hot. Give them a quick preliminary mash, then add the milk, olive oil, lime zest and salt. Mash until creamy, taste for salt, then cover and set aside. (Note: I usually add black pepper, but decided not to here so that the lime really shines through. If you feel naked without it, though, go ahead and add some.) </span><span style="font-family: Georgia, 'Times New Roman', Times, serif;"> - </span><span style="font-family: Arial, Helvetica, sans-serif;">I did</span></span></div>

Saute onion and pepper in olive oil and a pinch of salt, until peppers are softened, about 10 minutes. In the meantime prep all your other ingredients.</strong></div>

Add mushrooms and cilantro and cook until the mushrooms have released a lot of moisture, about 5 minutes. Add tomatoes, corn, wine, salt, cumin and red pepper flakes. Turn heat up and cover the pan, stirring occasionally, for 5 to 7 minutes. The tomatoes should break down and become saucy (if corn was frozen it may take a bit longer.)</strong></div>

It’s ok if there are a few bigger pieces, but aim for crumbs. Add them to the stew and mix well. Since tortillas can be salty, wait until they’re added to taste for salt. Mix in the lime juice and hot sauce, then fold in the black beans and heat through. Now taste for salt and seasonings.</strong></div>

Lightly grease a deep 11×13 casserole (cooking spray works just fine). Transfer the stew to the casserole and even it out with a spatula. </span><span style="font-family: Georgia, 'Times New Roman', Times, serif;">-</span><span style="font-family: Georgia, 'Times New Roman', Times, serif; font-weight: bold;"> </span><span style="font-family: Arial, Helvetica, sans-serif;">At this point I added a layer of cheezy . . I was feeling crazy!</span><span style="font-family: Georgia, 'Times New Roman', Times, serif; font-weight: bold;"> Add the potatoes in dollops, and spread it into an even layer. </span></span></div>

Stick under the broiler for a minute or two just in case the browning isn’t happening. <li style="margin: 0px; padding: 0px 0px 5px;"><span style="font-family: Arial, Helvetica, sans-serif;">Once the yeast has dissolved, add the nutritional yeast, jalapenos, garlic and onion powders before sifting in the flours.</span></li>
<li style="margin: 0px; padding: 0px 0px 5px;"><span style="font-family: Arial, Helvetica, sans-serif;">Knead on a floured surface until a nice smooth dough is formed and shape into a ball.</span></li>
<li style="margin: 0px; padding: 0px 0px 5px;"><span style="font-family: Arial, Helvetica, sans-serif;">Spray another large bowl with olive oil and roll the ball around in it before covering and allowing it to rise for an hour.</span></li>

Whatever they can! I had mushrooms in the fridge so started there, and this is what happened . . </span><br />

<span style="font-family: Arial, Helvetica, sans-serif;">Ingredients;</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">Bag of Mushrooms, chopped</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">3 sheets of Puff Pastry</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">1 Clove of Garlic, crushed</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">1 Onion, sliced</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">2 pinches Thyme</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">2 pinches Oregano</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">Splash of Dry Sherry/White or Red Wine, dependant on what you have, or like</span><br />

<span style="font-family: Arial, Helvetica, sans-serif;">1- 2 tbsp Vegan Worcestershire </span><br />

<span style="font-family: Arial, Helvetica, sans-serif;">Salt & Pepper to taste.</span><br />

<span style="font-family: Arial, Helvetica, sans-serif;">Method;</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">Preheat the oven to 180 deg and pull out the puff pastry to defrost while working on the mushrooms.</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">In a large pot, heat some oil, and throw in the garlic. Add the mushrooms and stir until all are coated in oil.</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">Add the thyme and oregano. When adding the thyme crush it between your forefinger and thumb, this will help release the essential oils & flavour! While this is happening, in a fry pan heat some oil and add the onions, cooking them until soft. As the mushrooms released their juices I poured them in with the onions, as they would make the mixture too soggy, but the onions absorbed the extra liquid and flavour up.</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">In a separate pot follow packet instructions to make '1 serving' of gravy, I used Gravox (accidentally vegan).</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">Stirring the mushrooms, add the onions, wine, beef stock, Worcestershire, and gravy, as well as <span style="background-color: white;">salt and pepper to taste. At this stage test the mushroom mixture, and tweak where </span><span style="background-color: white;">necessar</span><span style="background-color: white;">y.</span></span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">Once you are happy with the mix, assemble! I made 'sausage rolls', but these could also be done as pies, pasties, how ever you want to serve them! To make the rolls, spoon the mix in a line down the middle of a sheet of pastry as you would a sausage roll, leaving a 1cm gap between the mix and the ends. Roll and pinch the ends shut with a fork. </span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">Brush the rolls with milk, and sprinkle with sesame seeds.</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">Pop into the oven for approx. 15mins, or until golden brown.</span><br />

<span style="font-family: Arial, Helvetica, sans-serif;">I served these with mashed potato, peas & corn, every thing I used I had in the house, the whole meal didn't cost me a cent! Perfect for a pauper!</span><br />

<span style="font-family: Arial, Helvetica, sans-serif;">Method;</span><span style="font-family: Arial, Helvetica, sans-serif;">Preheat oven to 160°C and grease & line a cake pan with baking paper. </span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">Place nuttelex, chocolate, sugar, water, agave and vanilla essence in a saucepan. Whisk over medium-low heat until chocolate melts and mixture is smooth. Set aside for to cool.</span><span style="font-family: Arial, Helvetica, sans-serif;">Add egg replacer, and sifted flours and whisk until well combined and smooth.</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">Pour mixture into cake tin and bake in preheated oven for 50-60 mins or until a skewer comes out almost clean. Stand cake for 20 mins before turning onto a wire rack to cool. </span><br />
<span style="font-family: Arial, Helvetica, sans-serif;"><br /></span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">Icing:</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">Ingredients;<br />125g nuttelex<br />1 c brown sugar<br />1/3 c soy milk<br />1½ c icing sugar </span><br />
<span style="font-family: Arial, Helvetica, sans-serif;"><br />Method;<br />Melt butter in small saucepan. Stir in brown sugar and soy milk, and bring to a boil. Reduce heat and simmer for 3 minutes, remove from the heat, stir in icing sugar, as it cools it will thicken,once at a reasonable thickness pour over over the cake.<br />Let the icing set then enjoy with birthday person of choice. </span><br />

<span style="font-family: Arial, Helvetica, sans-serif;">Anyway I told myself this wouldn't be too hard, and embarked on my bounty adventure!</span><br />

<span style="font-family: Arial, Helvetica, sans-serif;">3 c Soy Milk</span><br />

<span style="font-family: Arial, Helvetica, sans-serif;">Yes, I havent put quantities of coconut/icing sugar down on purpose. We will get to that.</span><br />

<span style="font-family: Arial, Helvetica, sans-serif;">Method;</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;"><span style="background-color: white;">Condensed</span> Milk:</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">In a pot, mix soy milk, sugar and vanilla essence. Bring to the boil, and then turn down to simmer. Basically this takes a long time. Don't let the milk boil over and stain your stove. Intermittently check/stir (I love eating the skin that forms!). Generally I can only tolerate waiting up to an hour, but that is by no means a guidance, we have an electric stove which makes it near on impossible to simmer without boiling over and staining the stove top -_-.</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">Reduce this mix down to what you deem in a condensed milk thickness, or in my case 'i have waited too long this will do' :).</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">Pour into a bowl, as it cools it will thicken further.</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;"><br /></span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">Bounty Mix:</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">Combine condensed milk, the coconut and icing sugar. I went with 2 parts icing sugar to 1 part coconut, and used an entire packet of dessicated coconut! Keep on adding icing sugar & coconut until the mix is quite stiff - this will vary depending on how much you boiled down the condensed milk.</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;"><br /></span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">At this stage you will have a plethora of bounty mix. It is up to you what you do with it now, <span style="background-color: white;">I was too lazy to roll this mix into individual balls, then coat in melted chocolate, so I decided to go 1 step further and create a bounty bar slice!</span></span><br />
<span style="background-color: white;"><span style="font-family: Arial, Helvetica, sans-serif;"><br /></span></span><br />
<span style="background-color: white;"><span style="font-family: Arial, Helvetica, sans-serif;">Slice Base:</span></span><br />
<span style="background-color: white;"><span style="font-family: Arial, Helvetica, sans-serif;">Half a packet of Digestives</span></span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">3 tbsp Nuttelex</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">(<span style="background-color: white;">The amount of digestives/nuttelex is dependent on how big you slice dish is)</span></span><br />
<span style="font-family: Arial, Helvetica, sans-serif;"><br /></span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">In a food processor/blender process biscuit until crumbs.</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">Pour into a bowl and mix in nuttelex, so that it forms into a crumbly ball. The amount of digestives/nuttelex is dependent on how big you slice dish is. </span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">Line a slice dish with baking paper, and then the bottom with the biscuit mix.</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">Spread the bounty mix evenly over the biscuit, smoothing down, no gaps! Pop this into the fridge for about 15 minutes.</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">Melt chocolate in a bowl over boiling water, and spoon onto bounty mix, again spreading evenly. You will have to work quickly, as the cold bounty mix will set the chocolate. Score the chocolate into pieces you think you can handle, and pop back into the fridge for the entire thing to set.</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;"><br /></span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">Once the chocolate has set you can go to town on these bad boys, I highly recommend sharing these as I am sure the fat/sugar content it through the roof! I'm not kidding when I say they were the sweetest thing I have eaten in . . ever! Perfect for a vegan that so rarely gets to indulge on desserts :)</span><br />

scant 1/2 teaspoon salt<br />
400g coconut milk<br />
1 large onion, sliced<br />
400 ml water or light vegetable broth (I used Massels Chicken Stock)<br />
170 g of firm tofu cut into 1/2 inch cubes<br />
1 cup peas, fresh or frozen<br />
2 cups asparagus, cut into 1/2-inch segments<br />
squeeze of fresh lime juice<br />
1/4 cup small basil leaves</div>

In a large thick bottom pot over medium heat whisk the curry paste with the salt and a small splash of the coconut milk. Simmer for just a minute. Add the onion and saute until it softens up, just a minute or so. Add the rest of the coconut milk and broth and simmer for another five minutes. Taste and adjust for flavor - this would be the time to add more curry paste if needed.</div>

Stir in the tofu and (JUST BEFORE SERVING) the peas and asparagus, simmer for just a minute or two, just long enough for the vegetables to cook a bit. Finish the pot with a squeeze of lime and basil leaves. Taste, and adjust seasoning again if needed.</div>

<span style="font-family: Arial, Helvetica, sans-serif;">Polenta intrigues me. I want to know what makes polenta tick, you know? You can make it do all kinds of crazy things, I wish I were more scientifically minded so I could explain the workings of polenta but I cant. Something, something, gelatisation of starch, something. Fun fact about polenta: Its gluten free! </span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">Polenta has long been described as peasant food, which works for me seeing as its 2 days until pay day, and seeing as I have never had a flavoursome polenta dish (there is an exception, we will get to that) I decided to put my mind to creating a tasty polenta dish. Yes - tasty, MI4 anybody?? </span><br />
<span style="font-family: Arial, Helvetica, sans-serif;"><br /></span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">SO on this great experiment of mine, I decided to do 1 polenta, 3 ways. My first step was to inject the base of the meal with as much flavour as possible, once I had mastered that it was a matter of decided what texture I wanted/how I would present it. </span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">One thing to remember is to constantly taste the mixture as you cook, people sometimes fall into a false sense of security - especially when following recipes, were they follow blindly thinking 'this will taste good in the end', I feel like this meal especially will end up quite bland if you don't incorporate your seasoning's early, and then you end up with bland polenta that you just cant revive by pouring on salt & pepper whilst eating!</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">The base is as follows;</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;"><br /></span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">Ingredients</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">Polenta (Duh!) - I used approx a cup</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">Chicken Stock (We use Massel - no chickens harmed :) )</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">2 Onions, sliced</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">1 Tbsp Sugar</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">1 Bunch Fresh Basil, roughly chopped</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">Handful of Kalamata Olives, sliced</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">Handful of Sundried Tomato, roughly chopped</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">2 Tbsp Nooch</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">4 Mushrooms, sliced</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">2 Cloves Garlic, crushed</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">1 Tbsp Dried Oregano</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">Olive Oil</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">Salt (LOTS OF SALT) and Pepper.</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;"><br /></span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">Method;</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">Heat olive oil in pot. Throw in onions and stir on medium heat until soft. Add sugar, and cover, stirring every 10 minutes or so until caramelised. </span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">In fry pan heat some more oil, add garlic & mushroom and cook until soft. </span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">Bring 3 cups of water + appropriate amount of stock to the boil. Add polenta - whisking in, then start stirring! Don't stop. Awesome exercise for those 'tuck shop lady arms' when it thickens up. This will all happen pretty fast. Continue stirring until you can stand your spoon in it. Take off the heat.</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">Combine polenta, caramelised onion, basil, olives, sundried tomatoes, nooch, garlic & mushroom, and oregano. Season to taste - this is where your own judgement needs to come in, more garlic? More salt? Tinker.</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;"><br /></span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">From here I tried 3 different ways of serving this.</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;"><br /></span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">In a casserole dish I did a layer about 1cm thick, topped with salt & pepper. This was also cooked in the oven, approx 20 mins.

<span style="font-family: Arial, Helvetica, sans-serif;">In a deep casserole dish I thickly spread the polenta, topped with sliced tomato, 'mozzarella', salt, pepper & more oreganon, I cooked this in a preheated oven around 20mins.</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;"><br /></span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">In a cookie tray, I did a layer approximately the same thickness. This one I put in fridge to chill. After about 15mins I removed from the fridge, cut into triangles and fried.</span><br />

<span style="font-family: Arial, Helvetica, sans-serif;">The first polenta was probably the most boring, kind of an 'original'. Thin enough to pick up a slab by hand but not very stable. </span><br />

<span style="font-family: Arial, Helvetica, sans-serif;">The tomato topped deep dish was tasty. I wasn't overly enthusiastic about it at first just because, well it looked crap. But I enjoyed the creamy texture and little add ons of tomato and cheese. Tasty.</span><br />

<span style="font-family: Arial, Helvetica, sans-serif;">The chilled then fried polenta was pretty good, because it had time to set before being cooked it was more stable, easy to cut and serve, and pick up if you are so inclined. It went well with a dolop of creamy silverbeet I did as a side dish. I would recommend this cooking method for picnics and dinner parties, served along side an appetiser maybe to give a dish some bulk.</span><br />

This dish is perfect for picnics, lunches, served cold in summer or fresh from the oven in winter, passes down from generation to generation . . Ok, so I found it on <a href="http://www.easyasveganpie.net/2010/10/i-had-3-week-old-head-of-organic.html">easyasveganpie </a>a couple of years ago and having been making it ever since. </span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">This pie. Is amazing. I know I use way too many dramatic full stop sentences about all of my meals, but honestly - this pie is sooo good. I love cauliflower, I love caramalised onions, I like dijon mustard, such awesome flavours combined to make 1 super flavour, so without further ado, I introduce:</span><br />

<span style="font-family: Arial, Helvetica, sans-serif;">The Cauliflower & Caramalised Onion Tart</span><br />

<span style="font-family: Arial, Helvetica, sans-serif;"><span style="background-color: white; font-weight: bold; line-height: 19px;">Ingredients</span></span><br />
<span style="font-family: Arial, Helvetica, sans-serif;"><span style="background-color: white; line-height: 19px;">1 medium head of cauliflower</span><span style="background-color: white; line-height: 19px;">3 tbsp of olive oil</span><span style="background-color: white; line-height: 19px;">2 large brown onions</span><span style="background-color: white; line-height: 19px;">1 tbsp of sugar</span><span style="background-color: white; line-height: 19px;">1 packet of silken or soft tofu</span><span style="background-color: white; line-height: 19px;">2 tbsp of nooch</span><span style="background-color: white; line-height: 19px;">1 tbsp of dijon mustard</span><span style="background-color: white; line-height: 19px;">Puff pastry to line 1 pie dish (I use Borgs)</span><span style="background-color: white; line-height: 19px;">1/4 cup of vegan cheese of choice (tonight I used Redwoods's Mozzarella Cheezly)</span><br style="background-color: white; line-height: 19px;" /><b style="background-color: white; line-height: 19px;">method</b><span style="background-color: white; line-height: 19px;">Roughly chop cauliflower, toss in 2 tbsps of olive oil, season with salt and pepper and roast until soft.</span></span><br />

<span style="background-color: white; line-height: 19px;"><span style="font-family: Arial, Helvetica, sans-serif;">While the cauliflower is roasting, slice the onions, drizzle with remaining 1 tbsp of oil and cook on medium high heat in a heavy bottom pan, being careful not to brown them too much. Once the onion has wilted, turn the heat onto low, add the sugar, toss and cover the pan with a lid or a heat proof bowl, checking and stiring every 10 minutes or so. </span></span><br />
<span style="background-color: white; line-height: 19px;"><span style="font-family: Arial, Helvetica, sans-serif;">Drain the tofu and whizz in a food processor with the nooch and 1/2 of the caramalised onions.</span></span><br />
<span style="background-color: white; line-height: 19px;"><span style="font-family: Arial, Helvetica, sans-serif;">Line pie pan with pastry, prick the bottom and smear the dijon on the base. </span></span><br />
<span style="background-color: white; line-height: 19px;"><span style="font-family: Arial, Helvetica, sans-serif;">Sprinkle remaining onions on the mustard then the cauliflower. Use the tofu mix to fill the gaps, sprinkle with cheese and cook for 30 mins.</span></span><br />

<span style="font-family: helvetica;"><br />Creamy Silver Beet, Tomato, Bacon & Gnocchi!<br />Ingredients;<br />1 Small Bunch Silver Beet, thoroughly washed (eating garden snails= NOT VEGAN) and roughly chopped, no stems.<br />1 Pkt Gnocchi - I used a pre-made spinach gnocchi, if you have time on your hands and potatoes, make your own!<br />3/4 c Soy Milk<br />1 Tbsp Sour Cream (I used Tofutti Sour Supreme)<br />1 Tbsp Tomato Paste<br />2 Tbsp Water<br />1 Pkt Bacon- I used Redwood's Cheatin' Rashers<br />150 g Sun Dried Tomatoes<br />Handful of Pine Nuts<br />Salt & Pepper</span><br />

<span style="font-family: helvetica;"><br />Method;<br />Prepare the gnocchi as per packet instructions, and set aside.<br />Fry the bacon! The taste of this fake stuff really throws me, just because it looks like bacon doesn't mean it tastes like it! To improve it fry the bacon in a pot heavily salted, until crispy! Roughly dice it once done.<br />In a bowl, whisk the soy milk, sour cream, water, and tomato paste. Pour into pot with bacon, add pine nuts, sun-dried tomato, silver beet, and stir to combine. Cook, stirring for 5 minutes. Mix in gnocchi, add salt and pepper to taste, and eat!</span><br />

Green Bean Casserole. <br />GREEN BEAN CASSEROLE. I could eat it all day. All day. Its delicious. Like so good. OMG. Green. Bean. Casserole. <br />I promise you, this has every aspect of a good meal. Greens, creamy mushrooom sauce, crunchy onion topping. Let me school you on how to make the bestest most delicious dinner on earth!</span><br />

<span style="font-family: helvetica;"><br />Ingredients;<br />Green Beans - lots. of. beans.<br />Bag of Mushrooms, sliced<br />3 cloves garlic<br />Cayenne Pepper<br />Handful of Flour<br />3/4 c Chicken Stock (we use Massel)<br />Splash of Sherry<br />3/4 c Soy Milk<br />Fresh Bread<br />1 tbsp Margarine (we use Nuttelex)<br />2 Onions<br />Soy Milk<br />Flour<br />Vegetable Oil<br />Salt & Pepper</span><br />

<span style="font-family: helvetica;"><br />Method.<br />Preheat oven to moderate heat/180 degrees.<br />Fry thems onions! But first, remember all good things come to those who soak! Slice up the onions and put them in a bowl and cover with soy milk.<br />Pop a pot of vege oil on the stove and heat it up. In a shallow dish of flour toss the onions, (not too many so they clump!) The oil is ready when you drop a piece of onion in and it immediately bubbles. Fry up all the onions until they are crispy and let them drain on a paper towel. </span><br />

<span style="font-family: helvetica;"><br />Trim beans and cut in half. Boil some water on the stove and add the beans. Boil for about 5 mins and then remove, and run some cold water over the beans to stop the cooking, you want them both cooked and crunchy. Can you get your head around that?</span><br />

<span style="font-family: helvetica;"><br />In a pot throw the mushrooms, a slop of olive oil, garlic- minced, and cook until they soften and release moisture. In a cup whisk some stock, water and about 2 tbsp of flour. Add this to the mushrooms, as well as the soy milk, and a splash of sherry - dependent on how much you like sherry or how much you want to get drunk at dinner! Stir this until the sauce thickens, and add salt and pepper, adjusting to taste. Pour beans into the pot and stir through until thoroughly combined. </span><br />

<span style="font-family: helvetica;"><br />In a food processor put some fresh bread, marge, and salt & pepper. Blitz a few times, not so the mixture is dust, but a nice chunky crumbly mixture. Combine this with the onions. </span><br />
<br />
<span style="font-family: helvetica;"><br />To assemble your casserole, pour the bean/shroom mix into a casserole dish (who knew???), and sprinkle with onion mix. <br />Pop into the oven, and cook until the topping is golden brown, 10-15 mins.</span><br />

<span style="font-family: helvetica;">Considering the amount I have been eating lately - dates, nuts, white chocolate, dark chocolate, avocado and cheese toasties, peanut butter cups, chocolate slice, I could go on . . (yes I smash the stereotype about vegans not having much to eat) I have decided that our little family should go on somewhat of a 'detox' and keep the meals a little healthier!<br />So tonight, feeling inspired by a recent trip to Raw Kitchen in Freo, I made raw zucchini pasta! Super easy, super quick, like most raw food it is literally blend, eat!</span><br />

<span style="font-family: helvetica;"><br />I know my friend has been hanging out for me to share this recipe so what better forum than the internet where she can never lose it and ask me to send it to her again, and again, and again, seriously how many times do I have to send you the fig biscuit recipe Jess??!<br /><br /><span style="font-family: helvetica;"><br />Ahem.</span><br /><br /><span style="font-family: helvetica;"><br />Raw Zucchini Pasta with Walnut and Sun Dried Tomato Pesto:</span><br /><br /><span style="font-family: helvetica;"><br />Ingredients<br />1 1/2 Zucchinis<br />2 c Walnuts<br />2 Cloves Garlic<br />Fresh Basil<br />1 c Sun Dried Tomato<br />Handful of Nooch<br />Juice of 1 Lime<br />100g Rocket<br />Salt & Pepper to taste</span><br /><br /><span style="font-family: helvetica;"><br />Method<br />Whilst getting yourself sorted, soak those nuts baby!<br />Cut zucchini length ways, and using a potato peeler, peel off strips of zucchini 'pasta', continue until you literally cant peel any more, and eat the remaining zucchini! Pile this 'pasta' into a bowl, add the rocket leaves and combine. <br />Throw drained walnuts, garlic, basil, lime juice and sun dried tomatoes into a food processor. Mix on high until everything is 1 big paste. Add olive oil until you reach the desired consistency, you don't want this to be too oily, its not a sauce, its a pesto! Mix on high again to ensure everything is combined. I like to add the salt and pepper once I am done with the food processor because I feel if you add it before hand it gets so ground up the flavour gets lost. <br />Dump on top of the pasta leaf mix and stir until the pesto is evenly dispersed. <br />Smash it back and feel awesome for creating such an elegant raw meal :)</span><br /><br /><span style="font-family: helvetica;"><br />À la prochaine!<br />k</span></span>Anonymoushttp://www.blogger.com/profile/11237582293431657288noreply@blogger.com1
