Birthday Cake! - Vegan Caramel Mud Cake





Birthday's mean cake! So after stealthily quizzing Morgan on his dream cake I prepared to make him an epic Vegan Caramel Mud Cake!
Super simple! See recipe below, end result is tasty, moist and deliciously caramel!


Ingredients;
  • 200g nuttex
  • 200g white chocolate (I used Sweet Williams)
  • 1 c brown sugar
  • 3/4 c hot water
  • 1 tbs agave
  • 2 tsp vanilla essence
  • The equivalent to 2 eggs of egg replacer, I used 2 tsp of Ogran No Egg, plus 4 tbsp of water
  • I c plain flour
  • I c self-raising flour

Method;Preheat oven to 160°C and grease & line a cake pan with baking paper. 
Place nuttelex, chocolate, sugar, water, agave and vanilla essence in a saucepan. Whisk over medium-low heat until chocolate melts and mixture is smooth. Set aside for to cool.Add egg replacer, and sifted flours and whisk until well combined and smooth.
Pour mixture into cake tin and bake in preheated oven for 50-60 mins or until a skewer comes out almost clean. Stand cake for 20 mins before turning onto a wire rack to cool. 


Icing:
Ingredients;
125g nuttelex
1 c brown sugar
1/3 c soy milk
1½ c icing sugar 


Method;
Melt butter in small saucepan. Stir in brown sugar and soy milk, and bring to a boil. Reduce heat and simmer for 3 minutes, remove from the heat, stir in icing sugar, as it cools it will thicken,once at a reasonable thickness pour over over the cake.
Let the icing set then enjoy with birthday person of choice.
